Gelatin Salad
1 large box gelatin, any flavor
2 cups boiling water
1 cup cold water
8 ounces cream cheese, softened
1 cup vanilla ice cream, softened
1 container (8 oz.) frozen whipped topping, thawed an divided
crushed graham crackers, optional
Mix gelatin and boiling water together in a bowl until dissolved. Add cold water, cream cheese, ice cream, and half the whipped topping. Mix with a hand mixer until creamy and smooth. Pour mixture into a 9 x 13-inch pan and refrigerate 2-3 hours. Top with remaining whipped topping. Sprinkle crushed graham crackers over top as a garnish, if desired. Makes 8-10 servings. |
